Honey Curry Chicken - Slow Cooker Recipe

Ingredients

  • 1 large onion, sliced
  • 4 boneless chicken breasts (about 2 lbs), cut into chunks
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 1/4 cup honey
  • 1/4 cup dijon mustard
  • 2 tbsp butter or margarine, melted
  • 1 tbsp curry powder
  • 2 large red peppers, cut into bite-sized pieces

Instructions

  1. Place onion in 5 to 6 quart slow cooker. Add chicken and sprinkle with salt and pepper. In small bowl, combine honey, mustard, butter and curry powder. Pour over chicken. Add red peppers on top. Cover and cook on low for 5-6 hours. Serve with rice.
