Strawberry Rhubarb Pie

Ingredients

  • 1 1/4 cups sugar
  • 1/4 cup flour
  • 1 1/2 cups fresh strawberries (halve or quarter, if large)
  • 2 cups rhubarb, diced
  • 2 tbsp butter
  • pie crust (double)

Instructions

  1. Mix flour and sugar together and combine 3/4 of it wiht the fruits.

  2. Line 9-inch pie plate with bottom crust. Sprinkle remaining dry ingredients over the bottom. Add fruit mixture on top. Dot with butter. If desired, arrange pastry strips to form a lattice top crust.

  3. Bake in 425 °oven for 10 mins. Then reduce heat to 350° and bake 30 mins. longer or until fruit is tender.
