Zucchini Quiche Recipe | Simple Recipe

Here’s a vegetarian recipe that is tasty for all. If you have a vegetable and herb garden this summer, you’ll find most of these ingredients in your garden! Enjoy!

Zucchini Quiche

Ingredients
  • 2 tbsp butter
  • 3 garlic cloves, minced
  • 1 onion, chopped
  • 1/2 bell pepper, chopped (any color)
  • 2 medium zucchini, sliced in 1/4 inch slices
  • 1 tomato, chopped
  • 2 tbsp chopped fresh basil (or 1 teaspoon dried basil)
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 8 oz shredded mozzarella
  • 3 large eggs, beaten (use 4 eggs if mixture seems dry)
  • 1 cup milk
  • 1/4 cup sour cream
  • 3/4 cup bisquick
  • chopped scallions and/or basil for optional garnish
Instructions
  1. Preheat oven to 375°. Heat butter in skillet, add garlic, onion and pepper. Saute until softened, then add zucchini, tomato, basil, oregano, salt and pepper. Cook covered for 10 mins. Combine rest of ingredients and add to the zucchini mixture. Pour into a greased 10 inch pie plate. Bake for 25 mins or until the center is set. Let stand for 10 mins before serving. Top with chopped scallions and/or basil, if desired.
