Zucchini Tomato Casserole Recipe

Here’s a tasty recipe to make if you have a vegetable garden with tomatoes and zucchini.   This recipe calls for 1 cup of shredded cheese…  you can really use any kind of cheese.. mozzarella, swiss, cheddar!  Enjoy!

Zucchini Tomato Casserole

Ingredients
  • 2 medium zucchini
  • 3 medium tomatoes
  • 1 medium onion
  • 1 cup shredded cheese
  • olive oil
  • salt and pepper to taste
Instructions
  1. Thinly slice zucchini, tomatoes and onions. Dizzle oil in casserole dish. Layer one half of the zucchini, tomato and onion in dish. Sprinkle with 1/2 of the shredded cheese. Layer the rest of the vegetables and then top remaining cheese. Bake in 350 oven for 30 mins. or until veggies are tender.
