Penne with Gorgonzola

Trust me, if you like gorgonzola cheese, you will like this recipe ;-)   Its easy to make and delicious.  It calls for chicken broth but you could substitute vegetable if you prefer that. Enjoy!

Ingredients

  • 16 oz Penne pasta
  • 1/2 cup half & half
  • 3/4 cup chicken broth
  • 4 oz. gorgonzola cheese
  • 6 oz fresh baby spinach
  • 1/2 cup chopped walnuts for topping

Instructions

  1. Cook pasta according to package directions.

  2. While pasta is cooking, saucepan heat half & half with chicken broth to boiling. Simmer on low for 5 mins. Add gorgonzola, whisk constantly until smooth and melted. Add in spinach, stir for 1 minute. Toss pasta with sauce. Sprinkle with walnuts and serve.
