5 Meals for Under $30 at Target
What’s for dinner this week? How many times a week do you ask yourself that question! Check out our menu and recipes for this week. We are basing our menu on the great deals that you can pick up this week at Target. Everything can be purchased at Target and your cost will be less than $30! Our recipes are geared for a family of four, unless otherwise noted. That’s and average of $6 per meal or $1.50 per serving. How awesome is that!
You might find that you already have some of the items listed on the shopping list in your stock pile so your out of pocket cost will be even less! Just so you know, some prices may vary at your local Target.

Oven Fried Panko Crusted Chicken
with Scalloped Potatoes and Tossed Salad
Total Cost: approximately $5.64
Ingredients you will need for this recipe:
- Chicken drumsticks or thighs
- Panko breadcrumbs – 1 1/2 cups
- Garlic powder – 1 teaspoon
- Paprika – 1 teaspoon
- Fresh thyme leaves – 1 tablespoon or Dried thyme leaves – 1/2 teaspoon
- Eggs – 2
- Flour – 3/4 cup

with Caribbean Style Rice and Frozen Vegetables
Total Cost: approximately $5.77
Ingredients you will need for this recipe:
- Swai fillets – 1 lb.
- Butter or olive oil – 4 tablespoons
- Garlic – 4 cloves
- Lemon pepper – 2 teaspoons
- Lemon wedges
The original recipe calls for Pollock, but we substituted Swai which will taste just as good. Also, this was a recipe for 2, so we doubled it.
