Bacon & Chicken Pasta Recipe

I have a funny story about this recipe.  I made this recipe for the first time the other night.  I bought some bacon from the store and thought I would make spaghetti carbonara but felt like something a little different.  My husband pretty much likes anything with bacon so I did a little experimenting. This came out good, so good that when we started eating dinner that night, Mike said, this recipe is going on LRWC.  It wasn’t a question, it was a statement.  I said, I think it will, so I took out my camera and took a few pics 🙂  I do have to say, that not all of my experiments turn out well but this one was delicious.  🙂

This recipe was not difficult to put together.  I would say cooking the bacon took the longest.  I gave myself quite a shortcut with putting the chicken breast in my food processor to chop it.  I’m going to do that in the future because it was quick and easy.  If you go that route, just make sure you don’t over-chop it.

One thing that is unique about this recipe is that it does not have any grated cheese. At least that is unique for me! 😉 We didn’t even serve it with grated cheese. You could add a little hot sauce or cayenne pepper to the sauce if you would like something with a little kick. Hope you enjoy this recipe as much as we did.

 

Bacon & Chicken Pasta Recipe

Ingredients:

  • 1 lb. pasta, cooked
  • 5 – 6 slices of bacon
  • 1 – 1.5 lbs. boneless chicken breast, cut into small pieces
  • 1/2 red pepper, chopped or thinly sliced
  • 3 garlic cloves, minced
  • 1 1/2 cups milk
  • 2 tablespoons flour
  • 4 oz. cream cheese
  • salt & pepper to taste

Directions:

1. Brown bacon in large skillet.  Once cooked, remove bacon from pan and put on paper towels to drain. Set aside.  Discard all bacon fat left in pan, except 1 tablespoon.

2.  Place chopped chicken in pan.  Let cook until slightly browned.  Add red pepper and garlic.  Let cook for 2 more mins.

2. Mix flour with milk, pour into pan.  Add cream cheese.  Stir until all is combined.  Cover and let simmer for 10 mins. stirring occasionally.  Crumble bacon and stir in with sauce.  Serve over pasta.
