The Secret to Delicious Reuben Sandwiches

Did you make a corned beef for St. Patrick’s Day?  I usually make two, this way I have plenty of leftovers to make Reuben sandwiches.  I think I enjoy the Reubens more than eating the corned beef itself.  BUT what makes my Reuben sandwiches so good?  To me, its all in the dressing!  Thousand Island dressing, or sometimes a Russian is the traditional choice.  But if you make your own dressing, and it is not tricky at all, you will send your Reuben up and over the rainbow.  😉

My main focus for today’s recipe is the dressing, but if you are looking for a good basic recipe, here is one from Betty Crocker – Reuben Sandwiches  – just don’t forget to use the recipe below to make your own dressing!  You will never go back to the bottled dressing again.

Thousand Island Dressing for Corned Beef Reuben Sandwiches

Ingredients:

  • 1/2 cup mayonnaise
  • 1 tablespoon ketchup
  • 1 teaspoon minced onion
  • 1 chopped hard-boiled egg
  • 1 tablespoon minced red or green pepper

Directions:

Mix all ingredients. Use this recipe to make Reuben sandwiches.
