Meal Prep Recipe – Chicken with Sweet Potatoes Apples and Brussels Sprouts

Years ago, before couponing, when we were in a ton of debt and facing unemployment, we were forced to put ourselves on a strict budget. A budget we should have been on for many years prior but never did. While putting together our budget, we went through the previous years expenses to get a starting point. Besides being shocked by our grocery expenses, I was also shocked at the amount of money we spent on restaurant and take out.

I was disappointed in myself for letting that get out of control but I understood how easily it happened. There were those unexpected busy mornings getting out the door. Which child couldn’t find their homework, who forgot to tell me they had sports practice after school and needed their practice apparel which was still in the wash…and on and on. As a mom (or a dad) our priorities are the kiddos and we come last. So, getting lunch ready for ourselves in the morning, falls to the back of the list.

You’ve managed to get the kids out the door for school with everything they need and yourself off to work. But then lunch rolls around and…you have no lunch. So, out to the store or the restaurant you go.

Day after day, week after week, the expense of ordering out adds up.

One thing I learned was to prep lunches for the week. It saves so much time and money.

For those of you interested, I have a stock of meal prep containers that I use. While, we love these because they have compartments and stack nicely in the frig, any type of container you have at home will do.

This week I’ll be making Sheet Pan Chicken with Sweet Potatoes Apples and Brussels Sprouts!

Sheet Pan Chicken with Sweet Potatoes, Brussels Sprouts & Apples

Ingredients:

4 boneless, skinless chicken breasts, trimmed of excess fat and lightly pounded to a relatively even thickness
3 tablespoons extra virgin olive oil, divided
4 cloves minced garlic
1 teaspoons dried rosemary
1 teaspoon ground cinnamon
1 teaspoon kosher salt, divided
1/2 teaspoon black pepper, divided
4 cups Brussels sprouts, trimmed and halved (quarter if very large), about 1 pound
1 large sweet potato, peeled and cut into 1/2-inch cubes
1 medium red onion, cut into 3/4-inch pieces
1 medium Granny smith apple, peeled, cored and cut into rough 1-inch pieces (these pieces should be larger than the others)

Directions:

Prep: 15 min Cook: 35 min Pack up/Cleanup: 10 min Ready in: 1 hr

Preheat the oven to 425 degrees F.
Place the chicken breasts in a large, ziptop bag. Drizzle with 1 1/2 tablespoon extra virgin olive oil, then add the garlic, 1 teaspoon rosemary, cinnamon, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Zip the bag tightly, then shake and rub the bag to coat the chicken in the oil and spices. Set aside while you chop the vegetables and apples, or refrigerate for up to 1 day.
Once chopped, place the Brussels sprouts, sweet potato, onion, and apple on a large, rimmed baking sheet. Drizzle with the remaining 1 1/2 tablespoons olive oil, then sprinkle with remaining 1/2 teaspoon kosher salt and 1/4 teaspoon black pepper. Toss to evenly coat, then spread into an even layer.
Remove the chicken from the marinade and place on top of the apple and vegetables. Place in the oven and roast until the chicken is cooked through and the internal temperature reaches 160-165 degrees, about 35 minutes or until done.
Remove chicken to a plate to rest and cover with foil to keep warm
Toss the apple and vegetables and continue cooking for another 10 minutes until they are caramelized and tender
Serve warm with the rested chicken.
