Pasta with Ricotta Recipe

This is a recipe that I always thought was just too common or simple to write up.  Growing up in an Italian household, this is something my mom would serve very often.  We always loved it.  We never had Alfredo sauce, we would have pasta with ricotta.  Simple and delicious but not something that I considered out of the ordinary.

Now living in the Midwest, I know its not too common of a dish.  I was talking to some friends of mine this week and I said the two things I miss about living in NJ the most are probably the ocean and being able to buy my favorite brand of ricotta.  I said I love just having ricotta with pasta and they never had that.  What?!?!  I said, well maybe this recipe is just not as common as I had thought.  For those of you who have had this dish, I am sorry for posting such a run of the mill recipe, but for those of you who have never had this… give it a try and let us know how you like it!

The recipe is simple.  If you want to top your pasta with tomato sauce, you can do that or leave it with just the ricotta and pasta.  And of course adding grated cheese is a must!  😉

 

Pasta with Ricotta

Ingredients:

  • 1 lb. pasta
  • 2 – 2 1/2 cups ricotta
  • salt & pepper to taste
  • pasta sauce – optional
  • grated cheese

Directions:

Cook pasta as directed on package.  Once pasta is done toss with ricotta.  (Whisk ricotta with a tablespoon or two of water from the pasta if the ricotta is thick or lumpy. )  Serve with optional pasta sauce and grated cheese.
