Chicken & Potato Bake Recipe | Simple Dinner in One Pan!

This recipe is easy to put together and in an hour of baking, its done and delicious. Enjoy!

Chicken & Potato Bake

Ingredients
  • 1 - 1 1/2 lbs potatoes, cut into chunks
  • 1 medium onion, chopped
  • 1 lb carrots, cut into chunks
  • 3-5 garlic cloves, chopped or whole
  • 3 lbs chicken (with bone - can be a whole chicken cut up)
  • 2 tbsp fresh rosemary, chopped (or 1 tsp dried)
  • 1/2 tsp salt
  • 1/2 tsp pepper
Instructions
  1. Preheat oven to 425. In 9x13" baking pan mix all ingredients. Arrange chicken with the skin side up. Bake uncovered for 1 hour or until potatoes are tender and browned and juices run clear when chicken is pierced. Baste with pan drippings occasionally.

  2. Skim and discard any fat from pan drippings. Serve chicken and vegetables with pan drippings.
