I have a super yield on my tomato plants this summer. But.. we had a few bad storms here lately and my plants were all knocked over. A lot of the tomatoes fell off the plants 🙁 I decided to use them and this recipe popped into my mind. Its pretty simple and tasty, enjoy!
- 5 medium tomatoes
- 1/2 cup cornmeal
- 1/2 tsp salt
- 1/2 tsp pepper
- 1/4 cup olive oil for frying (may need more)
Select tomatoes that have a whitish tinge to them before they start to turn red. Cut tomatoes cross-wise into 1/2 inch slices. Combine cornmeal, salt and pepper. Dip and coat tomatoes in cormeal mixture. Heat oil in skillet until hot and place tomato slices in pan. Cook quickly until browned. Turn tomatoes over carefully and cook until hot and soft in the center. Drain on paper towels.
