Salmon Pasta Salad Recipe


Here’s a quick, easy and tasty recipe for a hot night. You can serve this on a bed of lettuce with some extra tomatoes. Enjoy!

Salmon Pasta Salad

  • 1 can salmon (approximately 15 oz.) - drain, flake and discard bones
  • 8 oz pasta (elbow, rotini or penne) - cooked and cooled
  • 2 tomatoes, diced
  • 1 cucumber, diced
  • 1/4 cup chopped parsley
  • 1/4 cup chopped onions
  • 1/4 cup grated parmesan or romano cheese
  • 1/2 cup olive oil
  • 1/4 cup lemon juice
  • 2 garlic cloves minced
  • 1/2 tsp dried dill
  • 1/2 tsp lemon zest
  1. Combine salmon, pasta, tomatoes, cucumber, parsley and cheese in large bowl.

  2. Whisk olive oil, lemon juice, garlic, dill and lemon rind together and pour over pasta. Serve on a bed of lettuce.
